Healthy Stuffed Mushrooms

This recipe offers a healthier twist on traditional favorites while still delivering delicious flavors

Ingredients:

  • 12 large cremini or button mushrooms, stems removed

  • 2 tablespoons olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup chopped spinach

  • 1/2 cup low-fat feta cheese, crumbled

  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. Brush the mushroom caps with olive oil and place them on a baking sheet.

  3. In a skillet, heat the remaining olive oil over medium heat. Add the onion and garlic, and sauté until softened.

  4. Add the chopped spinach and cook until wilted.

  5. Season the spinach mixture with salt and pepper, then remove from heat.

  6. Stuff each mushroom cap with the spinach mixture and top with crumbled feta cheese.

  7. Bake in the preheated oven for about 15-20 minutes, or until the mushrooms are tender and the cheese is golden
